Chocolate Coconut Frosting

1/2 c. butter
2 oz. unsweetened chocolate
1/4 cup. cocoa powder
2 c. powdered sugar
5 tbsp. milk
1 tsp. coconut flavoring

In small microwave-safe bowl, melt together 1/2 cup butter and two ounces unsweetened chocolate. Heat in 30-45 second intervals, stirring frequently, until mixture is smooth. Cool 10-15 minutes or to room temperature. Transfer to larger mixing bowl. Beat in 1/4 cup cocoa powder, two cups powdered sugar, five tablespoons milk and one teaspoon coconut flavoring, beating until smooth and slightly fluffy. Add additional powdered sugar to thicken, if needed. (Depending on the weather, you may need more one day and less another.) For garnish sprinkle sweetened shredded coconut.
