Coal Miner’s Pie

1 lb. ground round
1 c. chopped onion
1 (15 oz) can tomato sauce
1 1/4 tsp. salt
2 medium-size green peppers, coarsely chopped
1 c. canned corn or 1 c. frozen kernel corn
1-2 Tbsp. chili powder
1 tsp. pepper
2 eggs
1 Tbsp. vegetable shortening
1/2 c. buttermilk
3/4 c. yellow cornmeal
1 Tbsp. all-purpose flour
1 tsp. baking soda

Brown beef and onions in Dutch oven or large kettle, breaking up meat with a wooden spoon, until meat is no longer pink. Stir in tomato sauce, green pepper, corn, chili powder, one teaspoon of the salt and the pepper. Bring to boiling; lower heat, cover and simmer 15 minutes. Pour meat mixture into ungreased 10-inch deep-dish pie plate. Beat together eggs, shortening and buttermilk in small bowl for one minute. Beat in cornmeal, flour, baking soda and remaining 1/4 teaspoon salt just until well blended. Spoon over top of meat; spread evenly to cover entire surface. (Some of the mixture may run into the meat but it will rise during baking.) Bake in preheated 350° oven for 20 minutes or until wooden pick inserted in cornmeal layer comes out clean.
Makes six servings.
