Pork, Cabbage & Apple Skillet

4 well-trimmed (1/2” thick) bone-in pork chops
1/4 tsp. each kosher salt and pepper
2 tsp. oil
4 c. shredded cabbage
1 small red sliced onion
1 c. apple juice
1/2 tsp. kosher salt
2 tsp. cider vinegar
1/2 tsp. dried thyme
1 Gala apple, seeded, cut into 1/2” wedges

Season chops with salt and pepper. Heat oil in large nonstick skillet over medium-high heat. Add chops and cook, turning once, three minutes; remove to plate. Add sliced onion to skillet; saute three minutes until softened. Add cabbage, apple juice, salt and thyme. Cook, stirring often, five minutes or until cabbage softens. Stir in apple; cook two minutes. Stir in vinegar and add chops back to skillet. Cover and cook two minutes over low heat until apples are tender.
