Tomato Catsup

12 large ripe tomatoes, peeled and cored
2 large onions, peeled, finely chopped
4 large green peppers, seeded, finely chopped
4 c. pickling vinegar
2 Tbsp. salt
1 1/2 Tbsp. lemon juice
1 c. concentrated apple juice
1 Tbsp. ginger
1 Tbsp. cinnamon
1/2-1 Tbsp. mustard
1 tsp. nutmeg
1/2 tsp. black pepper

Place all ingredients in deep non-aluminum kettle. Bring to boil and simmer until thick (about three hours), stirring often. Skim and pack immediately in hot sterile pint jars, leaving 1/2 inch at top. Cap with lids. Process for 15 minutes in boiling water bath.
