Marinade for Bear Meat

1 chopped large onion
1 minced garlic clove
1 chopped carrot
1 bay leaf
1 Tbsp. celery seed
6 crushed peppercorns
Pinch of thyme
Pinch of sage
2 Tbsp. white vinegar
1 c. dry white wine
1 tsp. salt

Mix all ingredients. Pour over the meat in large bowl. Add water to cover meat. This marinade may be used again or boiled down to use with the drippings from the meat.
