Oatmeal-Date Cookies

1/2 c. packed light brown sugar
1/4 c. margarine, softened
1 Tbsp. thawed frozen apple juice concentrate
1 1/2 c. all-purpose flour
1 1/2 c. uncooked quick-cooking oats
1 whole egg
1 egg white
1 tsp. vanilla extract
2 tsp. baking soda
1/4 tsp. salt
1/2 c. chopped dates or raisins

Combine brown sugar and margarine in large bowl; mix well. Add egg, egg white, juice concentrate and vanilla; mix well. Add flour, baking soda and salt; mix well. Stir in oats and dates. Drop dough by teaspoonfuls onto cookie sheet lightly sprayed with nonstick cooking spray. Bake 8-10 minutes or until edges are very lightly browned in preheated 350° oven. Centers should still be soft. Cool one minute on cookie sheet. Remove to rack, cool completely. Makes three dozen. (Exchanges: one starch, one cookie).
