Cranberry Vinegar

1 qt. white vinegar
2 Tbsp. sugar
1 (12 oz.) bag fresh or frozen cranberries

In medium-size saucepan combine vinegar, sugar and cranberries. Bring to boiling over medium-high heat, about 10 minutes. Once boiling cook for three minutes or until cranberries have split and liquid is red. Remove from heat. Carefully pour half the mixture through a fine sieve or paper towel-lined strainer into a four-cup measuring cup or large bowl. Discard solids. Repeat with remaining half of mixture. Cool completely, then use funnel to pour vinegar into assorted bottles (makes beautiful holiday gifts). Refrigerate until gifting. Makes four cups.
