Maple-Nut Fudge

1 1/2 c. maple syrup
1 3/4 c. sugar
2/3 c. heavy cream or 1 (5 oz.) can evaporated milk
1 tsp. vanilla extract
1/4 tsp. salt
1/4 c. unsalted butter, cubed
1 c. chopped walnuts

Combine syrup, sugar, cream and salt in medium-size saucepan. Bring to boiling over medium-high heat, stirring. Once boiling, cook 7-8 minutes or until mixture registers 238° on candy thermometer. Remove pan from heat; with electric mixer beat in butter and vanilla. Continue to beat on high power for eight – nine minutes, or until thickened, light in color and fudge loses its glossy finish. Stir in nuts and spread into eight-inch square baking pan lined with nonstick foil; coat foil with nonstick cooking spray. Let stand until firm, about 25 minutes. Cut into squares. Makes 36 pieces.
