Angel Biscuits

2 pkgs. yeast
1/4 c. warm water
2 c. warm buttermilk
1/3 c. sugar
1 Tbsp. baking powder
1 tsp. baking soda
1 c. shortening (butter or margarine)
5 c. all purpose flour

Dissolve the yeast in the warm water. In a large bowl, combine the buttermilk, sugar, baking powder, baking soda and shortening. Add yeast and mix well. Add flour. Mix well and knead. Let rise two times then roll out about 1/2 inch thick and cut in 2-1/2 inch biscuit. Place on greased baking sheet. Let rise and then bake at 450º for 8-10 minutes. Lightly brush tops with butter. Makes about 2-1/2 dozen. Great to use as biscuit and gravy.
