Roast Loin Of Pork

5 lb. pork loin roast
Pepper
Salt
Apple jelly

Rub surface of pork roast with salt and pepper. Place roast on rack in roasting pan. Insert meat thermometer in thickest part of roast, not touching bone. Roast at 325° until done, allowing 30 minutes per pound – meat thermometer should read 185°.
