Meatball Sub Sandwiches

2 eggs
1 c. dry bread crumbs
2 Tbsp. finely chopped onion
1/2 tsp. pepper
2 Tbsp. grated Parmesan cheese
1 tsp. salt
1/2 tsp. garlic powder
1/4 tsp. Italian seasoning
2 lbs. ground beef
12 sandwich rolls, split
1 (18 oz) jar spaghetti sauce
Additional Parmesan cheese,
Sliced onion and green peppers, optional

In large bowl combine eggs, crumbs, onion, cheese, salt, pepper, garlic powder and Italian seasoning. Crumble beef over mixture and mix well. Shape into 1-inch balls. Place in single layer in a three-quart microwave-safe dish. Cover and microwave on high for five minutes. Turn meatballs; cook five – six minutes longer or until no longer pink. Drain. Add spaghetti sauce. Cover and microwave on high for three – five minutes or until heated through. Serve on rolls. Top with Parmesan cheese, onion and green peppers if desired. Makes 12 servings.
