Zucchini-Oat Chocolate Chip Cookies

1 1/2 c. all-purpose flour
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/2 c. butter, softened
3/4 c. granulated sugar
1 large egg
3/4 tsp. vanilla extract
1 c. quick oats
1 1/2 c. shredded zucchini
1 c. chopped nuts
1 2/3 c. (10 oz. pkg) dark chocolate morsels

Combine flour, cinnamon and baking soda in small bowl. Beat butter and sugar in large mixer bowl until well combined. Add egg and vanilla extract; beat well. Add zucchini; gradually beat in flour mixture. Stir in oats, nuts and chips. Drop by rounded teaspoon two inches apart onto lightly greased baking sheets. Bake for nine – 11 minutes or until light golden brown around edges. Cool on baking sheets for two minutes, then remove to wire racks to cool completely. Store in tightly covered container at room temperature. About 48 cookies.
