Maple Oatmeal Bread

3/4 c. boiling water
1 c. hot coffee
1 c. oats
1/3 c. shortening
1/2 c. maple syrup
1/2 c. sugar
2 tsp. salt
2 pkgs. yeast
1/4 c. lukewarm water
2 eggs, unbeaten
5 1/2 c. sifted flour (more to make stiff dough)

Combine boiling water, coffee, oats, shortening, syrup, sugar and salt. Cool to lukewarm. Add yeast to 1/4 cup lukewarm water; add to mixture. Add eggs and mix. Add flour gradually and mix. Add more flour to make a stiff dough. Place dough in greased bowl and let rise. Place in two greased loaf pans, let rise and bake at 350° for one hour.
