Carrot Bars

2 eggs
1 c. sugar
3/4 c. oil
2 small jars baby food carrots (1 c. cooked and mashed carrots can be used)
1 tsp. vanilla
1 1/2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. salt

Beat eggs; add sugar and oil and beat well. Add carrots, vanilla and dry ingredients. Pour into greased
13-inch x 9-inch baking pan. Bake at 350° for 20-25 minutes. Frost when cooled.

Cream Cheese Icing
1 1/2 c. powdered sugar
1/4 c. soft margarine
1 (3 oz.) pkg. cream cheese, softened
1 tsp. vanilla

Beat margarine and cream cheese together. Add sugar and vanilla and beat until smooth.
