Deep Fried Catfish

1/2 c. flour
1/2 c. cornmeal
1/2 tsp. salt
1/8 tsp. pepper
1 lb. catfish fillets
1/2 c. milk
1 qt. corn oil (your preference)

Mix flour, cornmeal, salt and pepper. Dip fillets in milk, then flour mixture. Heat oil to 375°. Turn fillets in oil once, 1 1/2 minutes each side. Drain on paper towels. Try serving with Apple-Celery Slaw. (TIP: To neutralize a fishy cooking odor, add a splash of white vinegar to 1 cup water, then simmer mixture on stovetop for several minutes.)
