Potato Boats

4 large baking potatoes
1 small onion, chopped
4 hot dogs, chopped
4 Tbsp. butter
2 Tbsp. milk
1/2 c. grated Cheddar cheese
1 Tbsp. minced fresh parsley

Prick potatoes in a few places and bake at 450° for an hour or so until done. Saute onion and hot dogs in two tablespoons butter for five minutes or so until onion is transparent and hot dogs begin to brown. Slice potatoes in half lengthwise and let cool a few minutes. With spoon scoop flesh into large bowl. Mash potato with fork, then stir in remaining ingredients. Scoop mixture back into potato shells and place on baking sheet. Bake 20 minutes or so until hot and bubbly. Makes four servings.
