Apple Luncheon Salad

3 c. diced red apples
1 c. julienned cooked roast beef
1 c. thinly sliced celery
4 green onions, thinly sliced
1/4 c. minced fresh parsley
1/3 c. vegetable oil
2 Tbsp. cider vinegar
1 garlic clove, minced
1/2 tsp. salt
1/4 tsp. pepper
Lettuce leaves

In bowl combine apples, beef, celery, onions and parsley. In small bowl combine oil, vinegar, garlic, salt and pepper; mix well. Pour over apple mixture; toss to coat. Cover and refrigerate for at least one hour. Serve on lettuce. Makes four – six servings. (Ham and cheese can be used instead of the beef.)
