Carrot Spread

2 c. shredded carrots
2 Tbsp. lemon juice
2 c. apple juice
2 Tbsp. honey
1 Tbsp. grated lemon rind

In 2-qt. saucepan combine carrots, juice, honey, lemon juice and lemon rind. Simmer over medium heat, stirring frequently, for 30-45 minutes, or until thick. Store in tightly closed container in refrigerator. Makes about 1 1/2 cup This is good on muffins or pumpkin bread.
