Maple Yams

3 lbs. fresh yams, peeled and cubed
Water
1/4 c. maple syrup
2 Tbsp. marg. or butter
1/4 tsp. salt
1/2 tsp. ground cinnamon
Fresh parsley for garnish

Cook yams in water in large saucepan until tender. Drain. Mash until no lumps remain. Add syrup, butter, salt and cinnamon. Stir. Garnish with parsley if desired. Makes 1 1/4 cups.
