Broccoli Casserole

1-1/2 lbs. fresh broccoli or (2) 10 oz. pkgs. frozen broccoli spears, cut up
10 oz. can cream of mushroom soup
2 eggs, well beaten
1 c. grated sharp cheddar cheese
1 med. sized onion, chopped finely
1 c. mayonnaise
1-1/2 c. seasoned croutons
1/4 c. melted butter

Cut fresh broccoli into spears and smaller. Cook until tender crisp; drain well. Place in buttered 2-qt. baking dish. (Can cook frozen broccoli in microwave in casserole, then drain). Combine soup, eggs, cheese, onion and mayonnaise. Pour over hot broccoli. Toss croutons with melted butter; sprinkle over casserole. Bake at 350ยบ for 25-30 minutes until bubbly. Yield: 5-6 servings.

(Makes enough sauce for twice the need. Freeze remaining sauce.)
