Chocolate Caramel Delights

1 c. soft butter
1-1/3 c. sugar
2 eggs,separated
4 tbsp. milk
2 tsp. vanilla
2 c. flour
2/3 c. cocoa
1/2 tsp. salt
2 c. pecans, chopped

Blend butter and sugar in a bowl; stir in egg yolks and vanilla; add cocoa and salt. Stir in flour, chill one hour. Roll into small balls and dip balls in slightly beaten egg whites and in chopped pecans. Place 1-in. apart on ungreased cookie sheet. Bake at 350º for 5 minutes. Press thumb in center of each and bake for three more minutes. Cool. Fill with caramel filling. In a Ziploc bag microwave until melted 1 c. semi-sweet chocolate chips; 3 tsp. shortening. Cut the tip off one corner and drizzle chocolate over the cookies.

Caramel Filling
42 caramels
9 tbsp. cream
Melt caramels and cream in microwave.
