Christmas Salad

2 boxes lime Jell-O
2 c. hot water
2 c. miniature marshmallows
1 small box cottage cheese
1 can pineapple, drained
1 – 8 oz. Cool Whip
2 tsp. lemon flavoring
Nuts, optional
Maraschino Cherries

Dissolve Jell-O in hot water. Add miniature marshmallows. Stir until dissolved. Let stand in refrigerator until starts to thicken. Add and beat cottage cheese, pineapple, Cool Whip, lemon flavoring and nuts (if desired) to Jell-O mixture. Top with maraschino cherries.

*Note: if using whipping cream, add 1/4 cup sugar to the cream.
