2 c. shrimp, cleaned and cooked
1/4 tsp. salt
Pinch of pepper
2 Tbsp. chives, minced
2 Tbsp. parsley
1 c. fine bread crumbs
Combine shrimp, salt, pepper, chives, parsley and bread crumbs. Place in individual potato nests (see recipe below) and top each with butter. Bake at 350º for about 20 minutes.
Potato Nests: Cook potatoes sliced into French fry strips in hot fat about 2 mintues (do not over cook). Press potato strips into muffin tins. Start at bottom and then line muffin cup around sides to top. Fill with shrimp mixture and bake.
