Apple Bread

1-1/2 c. oil
3 c. sugar
5 eggs
1 Tbsp. vanilla
1/4 c. milk
4 c. flour
1 Tbsp. baking powder
1/2 tsp. salt
1 Tbsp. cinnamon
4 c. apples, peeled and finely chopped
1 c. walnuts (optional)

Glaze:
2 Tbsp. melted butter
1 Tbsp. water
1/2 c. powdered sugar
1/2 tsp. cinnamon

Mix oil, sugar, eggs, vanilla and milk in large bowl. Mix dry ingredients together. Add to first mixture. Mix until well blended. Add apples and nuts, stirring well. Spoon into 3 greased and floured loaf pans. Makes 3 loaves. Bake 1 hour at 325º. Make glaze. After breads have baked, poke small holes with skewer or spoon handles in loaves and spoon glaze over bread. Leave in pans 10 minutes before removing. Double glaze if desired.
