Indian Fry Bread

2 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
1 c. milk
2 Tbsp. solid vegetable shortening
Vegetable oil for frying

Sift together flour, baking powder and salt. Cut shortening into the flour. Add milk and stir to form a ball. Knead dough on floured surface for about 3 minutes, until flour is incorporated and dough is smooth. Dust with flour if dough feels tacky. Divide into eight equal pieces, roll into balls and put back in bowl. Cover and let rest for 30 minutes. On a floured surface roll out each ball into a round about 1/8-inch thick. Cut a quarter-sized hole in center or each round. Heat 1-inch of oil in deep pan to 370°. In batches, add rounds and fry until golden brown, about 1 1/2 minutes on each side. Transfer to paper towels to drain. Serve chili and fry bread piping hot.
