Monster Cookie Bars

1/2 c. plus 1 Tbsp. unsalted butter, room temperature, divided
1 1/2 c. creamy peanut butter
1 c. sugar
1 c. packed brown sugar
3 large eggs
1 tsp. vanilla extract
1 c. all-purpose flour
3 1/2 c. old-fashioned oatmeal
2 tsp. baking soda
1 (12 oz.) pkg. semisweet chocolate chips
1/2 tsp. kosher salt
1 (12.6 oz.) pkg. milk chocolate M&Ms

Butter a 12-inch by 17-inch jelly roll pan with 1 tablespoon of the butter. Set aside. In bowl of stand mixer, cream together remaining 1/2 cup butter, peanut butter, brown sugar and sugar. Add eggs and vanilla and mix until incorporated. Add flour, oatmeal, baking soda and salt and mix again until incorporated. With spatula (and plenty of arm strength!) fold in chocolate chips and M&Ms. Press into prepared pan and bake for 14-15 minutes in preheated 350° oven. These bars are meant to be chewy, do not overbake! Cool completely on wire rack, then cut into bars.
