Cranberry-Nut Wild Rice

2 c. uncooked wild rice
1 c. dried cranberries
8 green onions, thinly sliced
Salt and pepper
3 Tbsp. olive oil, divided
2/3 c. pine nuts, roasted

Cook wild rice according to package directions; drain if necessary. In large skillet saute onions in one tablespoon oil until tender. Stir in rice, cranberries, nuts and remainder of oil; heat through. Season with salt and pepper. 12 servings.
