Avocado & Apple Salad

1/3 c. olive oil
2 Tbsp. lime juice
1 tsp. finely shredded lime peel
2 Tbsp. honey
1 Tbsp. snipped fresh mint
1/2 tsp. salt
12 c. torn romaine
2 green apples, cored, sliced
2 avocados, halved, seeded, peeled, sliced
1 small red onion, thinly sliced, separated in rings
4 oz. queso fresco, ricotta salata or farmer’s cheese, crumbled (1 cup)
Freshly ground black pepper

In screw-top jar combine olive oil, lime peel, lime juice, honey, mint and salt. Cover and shake well. Set aside. Place romaine onto large serving platter. Top with apples, avocados and onion. Shake dressing and drizzle over salad. Sprinkle individual servings with cheese and pepper. Makes eight servings.
