Shortcut Chicken Soup & Dumplings

1/3 c. reduced-fat biscuit mix
3 Tbsp. water
1/4 tsp. crushed dried thyme
3 1/2 c. 98% fat-free chicken broth
1 (12 oz.) fat-free premium chicken breast in water

In small bowl stir biscuit mix and water to make a soft dough. Add additional small amount of biscuit mix if dough is too sticky. Add thyme. In medium saucepan combine broth and chicken; heat until broth boils. Drop tablespoons of dumpling dough in boiling broth. Reduce heat to medium and slow boil 10 minutes. Cover and continue cooking an additional 10 minutes. Serves six.
