Chocolate Banana Cookies

3-4 extra ripe medium bananas
2 c. rolled oats
2 c. sugar
1/2 c. unsweetened cocoa powder
1 3/4 c. flour
1/2 tsp. salt
1 tsp. baking soda
2 eggs, slightly beaten
1 1/4 c. margarine, melted
2 c. chocolate chips
1 c. toasted almonds, chopped, optional

Puree bananas in blender. Measure 2 cups for recipe. Combine oats, sugar, flour, cocoa, baking soda and salt until well mixed. Stir in bananas, eggs and margarine until blended. Stir in almonds and chocolate chips. Refrigerate batter for 1 hour or until batter becomes partially firm. Measure 1/4 cup batter for each cookie. Drop onto greased cookie sheet; flatten slightly with spatula. Bake in 350° oven 15-17 minutes or until cookies are golden brown. Remove to wire rack to cool. About 2 1/2 dozen large cookies.
