Oven-Fried Tilapia

1 lb. tilapia fillets
1/4 c. all-purpose flour
1/2 tsp. salt
1/2 tsp. pepper
2 medium eggs
1 tsp. dried thyme
1/4 c. seasoned bread crumbs
1 tsp. dried marjoram
1/4 c. yellow cornmeal

Cut fillets into four serving pieces. Soak for a few minutes in ice water. Discard liquid, rinse under cold running water and pat dry with paper towels. In shallow pan combine flour, salt and pepper. In another shallow pan beat eggs until frothy. In third shallow pan mix together bread crumbs, cornmeal, marjoram and thyme. Dip fillets into flour mixture, egg mixture and then bread crumb mixture. Coat shallow baking pan with cooking spray. Place fillets in baking pan. Bake in preheated 400° oven for 10-12 minutes or until fish flakes easily with a fork. 4 servings.
