Shrimp Rice Salad

1 c. cooked rice
1 lb. shrimp
2 Tbsp. Italian salad dressing
1/4 c. finely chopped celery (can substitute)
3/4 c. finely chopped cauliflower
1 Tbsp. lemon juice
1/3 c. mayonnaise
1/4 c. chopped red bell pepper
1 Tbsp. chopped onion

Combine rice and salad dressing in large bowl. Stir well. Peel and devein shrimp. Chop into bite-size pieces. Add to bowl. Add celery, cauliflower, onion and bell pepper to bowl. Stir well. Add lemon juice and mayonnaise to bowl. Cover; chill until serving time. (Option: Add small can of pineapple chunks for a tasty tropical twist.)
