2 c. peaches, peeled and sliced
3 Tbsp. lemon juice
4 c. sugar
1 pkg. (1-3/4 oz.) powdered pectin
1 c. water
In heat-proof bowl, combine peaches and lemon juice, using a fork to crush fruit. Stir in sugar and let stand about 20 minutes, stirring occasionally. In saucepan, combine pectin and water. Bring to a boil. Boil 1 minute, stirring constantly. Pour hot pectin into the peaches. Stir for 2 minutes. Pour into clean jars or freezer containers. Seal and let stand at room temperature for 1 hour or until fruit is set. Freeze.
