Pastry for 2 crust 9-inch pies
4 c. peaches, peeled and sliced
1 Tbsp. lemon juice
1/4 c. butter
1/2 c. packed brown sugar
2 Tbsp. flour
Divide pastry in half. On floured surface, roll out a 13-inch circle of crust. Place in 9-inch pie plate. Arrange peaches in pie pan. Sprinkle with lemon juice. In 2-quart saucepan over medium heat, melt butter. Stir in brown sugar and flour until smooth. Cook 1 minute. Spoon over peaches. Roll remaining crust. Place over peaches in pan. Cut slits in top crust. Bake in 450º oven for 30 to 40 minutes or until crust is golden brown. Cool on rack. Makes 8 servings.
